Can anyone suggest two easy but impressive looking puddings that I can make to take to a family bbq on Sunday. I'll probably make a pavlova but would like something else as well
thanks

How about a Boodles Orange Fool? Dead easy and one of those things people always seem to love.
BOODLES ORANGE FOOL Serves 6
4-6 trifle sponges, cut into 1 cm (1/2 inch) thick slices
Grated rind and juice of 2 oranges
Grated rind and juice of 1 lemon
25-50 g (1-2 oz) sugar
300 ml (10 fl oz) fresh double cream
Orange slices or segments, to decorate

Use the sponge slices to line the bottom and halfway up the sides of a deep serving dish or bowl. Mix the orange and lemon rinds and juice with the sugar and stir until the sugar has completely dissolved. In another bowl, whip the cream until it just starts to thicken, then slowly add the sweetened fruit juice, whipping the cream as you do so. Whip until the cream is light and thickened and all the juice absorbed.
Pour the mixture over the sponge and refrigerate for at least 2 hours, longer if possible, so that the juice can soak into the sponge and the cream thicken. Serve decorated with segments or slices of fresh orange. (I usually grate chocolate on it instead!)

20 MINUTE TIRAMISU
20 sponge fingers from a packet
175ml very strong coffee
7 tblspns Marsala or sweet sherry
4 eggs
4 tblspns sugar
450g Mascarpone
30g bitter chocolate or 2 tblspns cocoa powder
Break up sponge fingers into short lengths and drop them into a shallow serving dish, then mix the Marsala and coffee and pour it over the biscuits. Press them down in the liquid making sure the liquid is all soaked up.
Separate the eggs.
Beat the yolks with the sugar with a whisk then mix in the mascarpone.
Now whisk the egg whites until stiff.
Scoop them into the Mascarpone mixture and mix thoroughly with a metal spoon.
Spoon the lot over the sponge.
Spread flat then grate over the choc or dust with cocoa.
Leave for as along as you can before serving – 10 minutes at least but the longer the better!

Jools here is my variation on Delia's Eton Mess which may be more portable than pavlova.

1. Make merangues (pop into a bag)
2. Whip cream or dairy free whip with vanilla essence in it. Pop into a container
3. Blitz a bag of frozen fruits of the forest ino liquidiser with icing sugar. Sieve and pop into a container
4. Hull punnett strawberries. pop into a bag

Assemble when needed

Jools,

I sometimes make a chocoloate cake recipe a (Belian I think)lady called Nicole posted on here a year or so ago. You make it the day before, takes no more than 1/2 hour to prepare and is terrily easy. It's quite rich, firm on outside, almost runny in middle & is real hit here. I like to serve with blueberries and raspberries.

It can probably be found through a msg board search or I can re-post if anyone wants it.

Jools, how about Delia's summer fruit terrine? It's pictured somewhere on the site today. You make it in a loaf tin and you could take it along complete with mould and turn it out when you get to the venue. It looks wonderful when turned out - when I made it for our family bbq a few weeks ago, a couple of people asked me where I'd bought it! And you could always make it in more individual moulds, too. Wonderful served with cream or vanilla icecream.

For anyone that hasn't found it and still wants, here is Nicole's choc cake:

200 g butter, 200 g chocolate, 250 g sugar, 5 eggs, 1 tablespoon of SR floor, 20cm diametre cake tin

Melt chocolate and butter in Bain Marie. Take of heat and mix sugar with a wooden spoon. Leave to cool a little, then had eggs one at a time, mixing throughouly with wooden spoon, then add flour, mix
Place in the cake tin and cook 190° for 20mn. The center is still very soft, this quite normal. Place on cooling tray. Eat only when completly cold

Do report back!
