I have a glut of courgettes at the moment as they are growing so fast
Anyone got some recipes -have made zuchinni bread and Delias courgette and feta cakes. Also done stuffed and baked ones. What else could I do?
Nice in quiche but don't freeze because they go soggy in texture. Good as part of a mixed mash too and do freeze OK.
Fried in batter with tzatziki - really good. I grate them raw into salads as well which is tasty . Ratatouille. Roasted with other veg. Quesadilla (think you've done my recipe for it before Jools).

Courgettes stuffed with savoury mince and tomatoes, cheese and breadcrumbs sprinkled on top and baked in oven. Courgette ratatouille. Courgette fritters, lovely is you add a bit of chilli flake and lime to the batter. Grated and mixed with finally chopped onion and dressed with an orange and mint viinaigrette. Very refreshing. Just sliced lengthways, griddled then lemon juice, olive oil and fresh basil to dress with salt and pepper. Serve at room temperature.
Grated, drained, fry some lardons allow to cool, mix together and use Delia's HTC quiche recipe, delish.
Ummm, 2nd thoughts, cut into strips and fried in batter as Saffy says (with the tzatsiki on the side). Sheer bliss. Biggs
Jools, I asked a similar question re a glut of cucumbers. I think there is more to be done with courgettes and I am fast approaching that same "problem" I like them cooked with tomatoes, garlic and parmesan. Also stuffed. I once did a courgette soup, made the mistake of freezing it and it turned out like water - ugh.
found a nice rice pilaf the other week in a book. (For 6).
2 cups basmati rice, soaked for 30 mins
2 cups water
3 courgettes diced (1 yellow, 2 green if poss)
1 onion sliced
4 cloves
2 teaspoons cumin seeds (recipe said 1 but wasn't enough so doubled it when i made it next)
6 Cardamon pods crushed slightly (recipe said 3 - see above!)
S&P
BIG frying pan or saucepan
Fry onion in tablespoon of oil till soft, add courgettes for 4 mins, then spices. Fry for about 3 mins then add rice and water, S&P, stir and cover for 15 mins on low heat

minted courgettes in sweet & sour dressing - Griddle, roast of BBQ the sliced courgettes. Fry some crushed garlic then add rice or wine vinegar, oil, sugar & salt to make a dressing (simmer so it reduces). Then add chopped fresh mint and pour over the courgettes. Lovely as a salad.
I was given this recipe by a French friend, it is delicious and freezes beautifully. You will need 1kg courgettes, 1 lge onion, 2 cloves of garlic, 1 veg stock cube, 1 chicken stock cube, 2 heaped tblspns cream cheese, 1 oz butter. Melt butter in a large pan, add the peeled and chopped onion and saute for 10 mins with the crushed garlic. Wash and slice the courgettes into rounds (no need to peel) add to the pan with the stock cubes and just enough water to cover, bring ot the boil then simmer until the courgettes are just soft. Season really well, add cream cheese and blitz with a wand or put into a blender. Let me know if you tried/liked it!
Another thought, I sliced them put into a single layer with tomatoes, alternated. Oil a shallow ovenproof dish for this then put dollops of creme fraiche and grate over parmesan. Pop into a hot oven (200deg ish) they only take 5-10 minutes, very nice as a side dish.
I have recipe for a lovely Italian courgette soup which freezes excellently. When you re-heat it, you break a large egg and some grated parmesan into a tureen and then pour the very hot soup over, stirring all the times. You get flecks of egg/parmesan through the soup.
