I make Ainsley Harriott's
50g butter
150g SR flour
1 tsp salt
2 tsp baking powder
1 tblsp caster sugar
1/2 tsp cracked black pepper
150g yellow cornmeal
2 eggs lightly beaten
300ml buttermilk
1 red chilli
2 tbsps chopped fresh herbs (eg parsley, chives basil)
Oven gas 4 160C
1. Melt butter and use a little to grease 1.2litre loaf tin
2. Sift flour, salt and bp into a bowl and then tip in sugar, pepper and cornmeal - mix.
3. Make a well in the centre and stir in eggs, buttermilk and butter until you have a smooth batter. Fold in chilli and herbs
4. Put in tin and bake for 40 - 45 mins until just golden and skewer comes out clean.
Serve warm or cold, with or without butter
Good with BBQs!!

There's also 2 recipes in the community database. One from cupcake and a "mealie meal bread" from Meisie.

American cup = 240ml if that helps.
