I should imagine that the it would get rather waterey Nanny - you never see frozen courgettes in the supermarket - well I never have anyway

It's fine. it's defrosting it and eating it that might be the problem ;-)

Nanny, have you got any stock? Marrow soup would freeze. Courgettes go soggy frozen in quiche, so I guess marrow too would. Though marrow frozen and done for a soup to be whizzed would be OK.

I think it would go soggy, too. Does anyone remember marrow and ginger jam? That seems to ring a bell from childhood. Heaven knows how they got it to set!

Marrows, courgettes and cucumbers have a great percentage of water in them and therefore do not freeze well on their own.

The only way I have frozen down marrow successfully was in marrow sauce (see recipe in my file). It kept really well for 3 months at -18 deg. c. If the sauce looks as if it has seperated on thawing do not worry, just give it a really good stir and the sauce will come back to normal.

Courgettes freeze well in a ratatouille.
