Mango and Passion Fruit Meringues with Mascarpone

– How to Cheat

One of my great Christmas standbys this year (because they were so brilliant last year) is Marks & Spencer's meringue nests of what I call mini pavlovas. There’s nothing in them except sugar and egg white – pure unadultered meringue. There’s no limit to how they can be used for quick, no-work-atall, desserts. This one is also a real winner – thick, luscious mascarpone and tart passion fruit and mango.

Serves 8

Ingredients

1 x 250g tub mascarpone, chilled
few drops pure vanilla extract
1 x 96g pack of 8 Marks & Spencer meringue nests
1 x 425g tin Marks & Spencer sliced mangoes in syrup
4 small or 2 large passion fruit

 

In a bowl, mix the mascarpone with the vanilla extract. Place the meringues on to serving plates. Divide the mascarpone mixture between the meringues piling it up in the centre.

Next, drain the mango slices and cut them into thinner strips. Arrange the strips of mango on top of the eight meringues. Cut the passion fruit in half, scoop out the flesh and drizzle some over each meringue, serve immediately.
