You can tell summer is on the way: this month's menu for 4 includes asparagus, simply served with Hollandaise sauce, as a starter, a wonderful Mediterranean chicken recipe and classic prepare-ahead pavlova (which serves 6, to allow for seconds!).
The marriage of asparagus and hollandaise was quite definitely made in heaven, and it seems sad to me that 'health' issues should bring about a divorce. Therefore I have set out to lighten the sauce somewhat by the addition of stiffly beaten egg whites. I now actually prefer the golden foam to the classic all butter and egg yolk sauce.
The delicious combination of chicken and rice, olives and peppers is typical of all the regions around the western Mediterranean but, to my mind, this Spanish version, with the addition of spicy chorizo sausage and a hint of paprika, beats the lot.
This is a delicious pudding from Australia, which is very difficult to make if you don't have the right recipe but dead easy if you do! Of course, this can be made with just one kind of fruit – for instance, strawberries. In the winter, sliced bananas and chopped preserved ginger, or slices of fresh mango with passion fruit are good.
