Here, I’ve planned two types of buffet party: one hot and one cold. Both serve twelve people but can be increased to serve eighteen or twenty-four by making one-and-a-half times or twice the amounts specified in the recipes. 
Before embarking on the recipes themselves, I thought it would be helpful to give you a running order to show what can be prepared ahead, what on the day itself and what should be left until the time of serving.
The other two menus – one perfect at any time of the year, the other especially good in summer – are for eight people, but can likewise be increased to serve sixteen or twenty-four.
