Once upon a time, vegetarians could expect nothing more exotic than a nut roast. Now, as Delia's latest book explains, they are spoilt for choice, drawing on many of the world's classic cuisines for inspiration and flavour.
Vegetarian food is becoming more and more popular. Strict vegetarians will not eat any meat or fish and avoid animal products such as gelatine and suet, however some ‘vegetarians’ will eat fish. A vegan diet is one that contains no animal products at all, so vegans are vegetarians that do not eat dairy products or eggs.
