Just received the following 2 recipes from our local pick your own and thought I would share.....

Raspberry and redcurrant jam
1kg raspberries
1kg redcurrants
100mls water
2kg sugar

- Wash the redcurrants, remove the stalks and put into the preserving pan with the water.
- Cook for 5 minutes.
- Add raspberries and bring quickly to the boil, stir in the warmed sugar and continue stirring until it has dissolved.
- Bring to the boil and boil hard until set.
- Pot and seal.

Raspberry jam
1 kg raspberries
1 kg sugar

- Simmer the fruit gently until the juice flows, then bring to the boil and boil gently for 10 mins.
- Warm the sugar if possible and add to the fruit.
- Stir until dissolved, bring quickly to the boil and boil until setting point is reached.
- Pot and seal.

Received the River Cottage news letter this morning and in it they are offering a recipe book on jam making - think it's £6.99. Dottie Mayx

This year I made the most wonderful gooseberry and elderflower cordial jam.
All year round I store jams, but it seems that the housewives of today, prefer to throw good money away on commercial preserves, than to take the time to make their own.
When you think of how cheap it is to make jam or jelly picked free from the countryside, and what it costs in the shops, I shudder.

In this months Waitrose magazine there is a recipe for * Tropical Fruit Salad Marmalade * - Perhaps I had better put it in My Profile as it is rather long but will type it out here if anyone is interested. Dottie Mayx

Thanks for the Redcurrant & Raspberry Jam recipe I picked loads of them last night so now I know what I shall do with them!
