Can anyone help?

I had a party on Sunday which, due to the lovely weather I majorly over catered for (not that I'm complaining about the sun!) I have a large amount of sliced cooked ham and I wanted to check if it was safe to freeze it and if so would it affect the taste? Also any suggestions for recipies to use it in would be muuuch appreciated!

I've frozen cooked ham. The hams I cooked myself had to be made into something like Delia's "corned beef hash", but using ham. The ham I bought pre-cooked from Forman and Field (on Delia's site), could be sliced and used as normal after freezing.

I would freeze it - individual slices - interleaved with clingfilm or greaseproof paper - then just remove as many slices as you want at a time - and use for sandwiches, quiches, salads etc.

I freeze ham all the time and it doesn't affect taste or texture.

I deliberately cook too much ham so I can use it for other things!

It's best used to make a chicken ham and leek pie imo, simply fry a finely-sliced leek in some butter with some salt, add a spoonful of flour, then a couple of diced chicken breasts and diced ham and cook until sealed on the outside. Add some milk and simmer until thickened, then some chopped parsley, and allow to cool and use as a filling in a pie.

You've probably made the decision by now, but my answer would have been, as always it depends on how long it's been sitting around and at what temperature. I'd then make the decision accordingly. I think that applies to all food that is going to be frozen. xx

Sorry the answer is a little late, yes it freezes well for 3 months at -18 deg. c.

Best way is in single slices interleaved with greaseproof paper or whatever you use.

It keeps really well, the flavour is not affected although sometimes it can look a little dry.

Best to cut the fat off first, as fat does not freeze well and goes rancid first.

Thank you all very much. I ended up making a ham and chicken pie and froze the rest (it was already sliced for the party). Hopefully in a couple of weeks (for another party) it will happily end it's life in quiche lorraine, classic but lovely with good ingredients!
