Hi there me again
I have used Rita's sponge cake recipe and it's wonderful. Made a 10" square cake upgraded from the standard 8" recipe that she uses on her site. But I was wondering about making it chocolate. Does anyone know how I do it? Is it just a question of replacing some of the flour with cocoa powder do you know? I don't want to risk losing the lovely "sponginess" I got before. Some recipes also suggest adding melted Belgian chocolate to the butter/sugar mix?

Rita is the expert on cakes on here for sure, and I will look forward to reading her reply, but I am sure adding some decent pure unsweetened cocoa powder is all that is needed.
I use Delia's all in one recipe which has never failed me as I seem to have lost my touch with most cakes sadly! I simply add a couple of spoonfulls of cocoa powder to the mixture to make a chocolate sponge.
I would reduce the amount of flour by 90 gms for the 10inch square and replace it by cocoa powder.
You can also melt some dark chocolate and add it after you cream the butter and sugar together but I prefer the cocoa powder better.
