Bonjourno My loves!

Howis best to cook these? Marc wants them for his dinner tonight. Now the DR site is normally really good but for these it just says, "best served pan fried". I have a lovely ginder with rosemary, lavender and oregango salt in which is for lamb, and worked really well on the shoulder of lamb I did a couple of weeks ago. Shall I just grind that over and lightly pan fry? I don't think lamb really needs a great deal of "treatment" but what would I know, I won't eat the stuff!

Any ideas gang?

Less is Best James !! get your pan hot and seal as you would a nice steak, so that the lamb is still pink inside. I would marinade it for about 1 hr before with a little olive oil and some of your lovely spices from your grinder.

Course you can my lovely! I'll set a place!!!!! The pack actually has 4 in which is fine for 2 people, but I don't like lamb!!!!

I do think, as you say, that less is best with lamb. Actually, it is with most top quality meat really.

I'll get a nice bottle of vino in too!!!

I know you look slim on your photo James, but you really must be thin as a rake. I bet when you turn sideways, they mark you absent.

Your frying plan in a frying pan with your wonderful seasoning sounds gorgeous to me.

Nah, Im just fine DS. I just do not have a sweet tooth. Im leathal with a plate of fresh sausage rolls!!!! ha ha ha ha!!!

Also, love fresh bread. Potato in many forms. Also pasta.

Im certainly not fading away love.

James, I thought you said you ate only 4 slices of bread a month, or a year or something, compared with my 4 a day.

my prob is that all the foods I enjoy, seem to be carbs. I dont like plastic bread, only home made, but itsimpossible to keep fresh, so I rarely bother.

Also love crispy bacon, but again, not healthy, so I do limit it.

Home made bread for us too, James, and yummy crisp streaky bacon. I do bread every other day but if I miss doing it it still stays fresh.

Thats my biggest prob Gerry. It never stays fresh for me. So we end up eating a slice for me, three for Marc and the rest goes to the birds! Its never any good the next day. I dont have the freezer space to slice and freeze so I don't know what else to do!

Funnily enough though, I prefer streaky bacon too! Neither bread nor bacon are good for us though, so they are very limited in our house, although I would eat more bread if I could keep it fresh.

We went to Norfolk last weekend and my sis bought a loaf of hovis with her. I brought it home, and it still feels FRESH!!!!! Marc has been eating it with pate for breakfast! What on earth have they added to it to make it stay fresh for over a week!!!!!!!!!!!!!!

James, what flour do you use for bread? What are all your ingredients? Bread and bacon are good for you!!!

I use delias basic white bread recipe. The wholemeal i sort of make up a bit! LOL

I dont consider bread nor bacon to be "good" for you though..... Moderation is fine of course.

White bread does dry out more quickly. I use different flours but my current favourite is Waitrose Malted Grain Bread Flour (organic). I add a dash of oil, some small seeds such as sesame and linseed. Right now I've replaced water with almond milk. I'll let you know if that keeps it fresher for even longer. Maybe the seeds do something or other too, because they must contain oil.

I've been doing the same bread for ages Gerry, I do need to try new ways...... my bread, literally, is horrid by the time we have finished eating the fresh stuff cut off!!!!! Within an hr of taking it out, its brill, but after that, breadcrumbs is about its only use, and I can only store so many breadcrumbs in my freezer!

i think my bread making needs a whole new angle to it.

James, I've used that so-called "easy blend" once, years ago in a friend's house and no shops nearby, and really disliked it. My bread-making technique is totally different. When I cook tomorrow's one I'll wait a couple of days and email you exactly what I did.

James,I've had some more thoughts. You said it was brill within an hour of taking it out. Well it's going to dry our very quickly if you cut into it while it's so hot. It would help I think if you wrapped it in a clean tea towel when you've cut it.
BTW Dried breadcrumbs keep forever in a plastic bag and don't need to be frozen.

Thanks Gerry. I would really like to "crack" breadmaking. As it stands, I'm ok, but could do better!
Do you use a bread improver? I know TC swears by it. its only vit c powder socan't do any harm. What do you think?
