My sponge cakes don't seem to rise like they should is it because I use an electric mixer and mix to long. I measure all the ingrediants also sometimes the cake seem a little dry.

What is the recipe you are following? I always do 1 egg = 2oz then use the electric mixer to cream butter and sugar then add one egg at a time and fold in the flour and baking powder after sieving it in from a good height. If it feels a little stiff then i add a little milk. It usually produces a well risen sponge. I always put the oven before i start so it has warmed up nicely. I hope by reading my way, and hopefully others, it will give you an idea what is going wrong.

I had this problem, untill I used smaller tins 7in, I was using 6oz marg,6oz sugar 3 eggs 6oz sr flour and the tins were 8in, they were like pancakes, they tasted ok but didn't look good.
