Hello again,
I really want to try Rita's madeira cake recipe, however I've hit a stumbling block. Rita's cake asks for Fine Sponge Flour - I can't find this anywhere and wondered whether I could use plain or self raising instead?

You can buy premium Self Raising flour from the supermarket. Famous make but can't remember which one - mcDougalls or Homepride or something. In a blue bag. i would use that.

Hi Emma, just noticed on your profile where you live, we used to live in Amington until moving over here...small world. Can you get flour "fluid" which is free flowing? Here in France we don't get a lot of SR flour but some stock "Gateaux". They also do "Farine Fluide" which is lighter and free flowing with no lump guaranteed. I wonder if you look you might find it described that way.

Sorry reading that back seems to mean it is liquid !! I meant to say the fluid bit is only a description of how it comes out of the packet, not really liquid.

Hi Yummy,
It's a small world alright! I would swap Tamworth for France in a heartbeat! Do you miss it here?
I tried self raising flour in Rita's recipe, however it turned out really, really greasy (See new post!) I'm not sure if this was down to the type of flour or what - Maybe I do need the fine sponge flour after all...!
I'm not sure what I did wrong - trial and error I suppose!
