oh gerry why didnt i sick with your mutton curry recipe!- it looked so good but there were alot of ingredients i didnt have so i made masala mutton with aromatic pilau.- the sauce tastes too much of fennel seeds and hubby hates fennel so have had to make another sauce- the naan bread wont rise- i have cut my finger- its 38degrees and you should see the mess in the kitchen- BRING ON THE BEER!!

Calm down, let it sit overnight, skim the fat and tell OH they weren't really fennel seeds they were celery seeds, I bet he won't be able to tell in a curry! It really is better next day :-) Egg and chips tonight, he'll love that !
So sorry, treehugger. Yes there are a lot of different spices but I keep loads in stock. I do find, though, one can leave out or substitute. I sometimes do those thin breads you do briefly in hot oil and they puff up when you press them down. I'll join you in the beer, since I too now feel quite upset.

hubby and brother will be here in a couple of hours expecting a curry! on the plus side- i have skimmed all the fat off the mutton and now have it slow-cooking in the bottom of the oven with the new sauce- have made a nice indian potato dish and raitas and will serve puppadoms if the naans dont come out right!
Your patience Treehugger leaves me in total awe ! If it ain't right I never fix it - in this case I'd call the local takeaway. Sorry but don't do stress !

when you get the jar of shrimp paste make sure you keep it in a ziplock bag in the fridge as it absolutely stinks!!!
